I was trying to recover a single JPG file I deleted in a folder on my desktop by using the “undo” button and clicked it a few times and suddenly every picture disappeared and they aren’t in the recycle bin or file history. I never clicked delete so I’m really confused on where all these photos went

First of all, your photos were not "wiped" -- this is a special function that takes highly specialized software to do -- so I wish folks would quit using this term.  Instead, your files were probably just "erased".

Why the difference -- because erased files can be recovered, wiped files can not.

The best file recovery tool I have used is GetDataBack from Runtime software.  You need to check it out since they might have a trial version.  You would have to retrieve the files to a USB drive or stick -- because they can't bet retrieved to the same drive from which they were erased.
