Hi,
I was given an h8-1240t that hasn't been updated in a long time.
I can see the updates via the HP page, but in cases with multiple choices, it's not clear what I should be doing...
Bios is 7.09 and that's the main reason I was looking into updating (to perhaps add a decent video card) but I didn't want to start updating without knowing which updates I should actually be running.
The HP system-detect-thing has no issues picking up my model/serial number.

That is the year 2015 ("15") November ("11") version of Windows 10. Quite old!
There is a '1607' version, and a '1703' version, and there is expected to be a '1710' version.

@-andrew-, welcome to the forum.
You didn't say if you are still using Win 7 which came installed from the factory. However, the first thing that I suggest doing is install the latest version of HP Support Assistant here. Then, run HP Updates by clicking on My PC. This will tell you if there are updates available. This should bring your system up to date. Also, run Windows Update.

I suggest attempting to install the BIOS updates that are available; beginning with the one for Win 7. The BIOS updates, however, are not OS specific. You have one PCI Express 3.0 x16 slot on your motherboard. I suggest contacting the manufacturer's Tech Support for help with choosing the best video card for your system. They are the experts on their products.

Please use the "snipping tool" (included in Windows 10) to capture what you see on the HP screen,
and paste that image into here.
My own "rule-of-thumb" is to *NEVER* install a BIOS update, unless I am *SURE* that it will resolve a problem that *I* am having with my computer. Too easy to "brick" the motherboard.

Please use the Windows "Snipping Tool" to capture a snapshot of that page, showing the available choices,
and attach it here.

I can't seem to find the same page that showed multiple listings; however, HP Support Assistant says "No updates available".
When I go on the HP site, under Software Drivers and Downloads, it correctly identifies my system, but I cannot select Windows 10.
Under both 7 and 8, it notes a BIOS of
HP Consumer Desktop PC BIOS Update (ROM Family SSID 2AD5)

What problem do you have that you think that an update to the BIOS will fix?
What's the date-stamp on your current BIOS? It might already be "higher" than in any of the downloads.
Since nothing is available, there is no need to update the BIOS before installing Windows 10.
My own "rule-of-thumb" is to *NEVER* install a BIOS update, unless I am *SURE* that it will resolve a problem that *I* am having with my computer. It's too easy to "brick" the motherboard -- for example, if the AC power goes out during an update.
