Product: Example: Pavilion HP ENVY h8-1455 Desktop PC65XX
Operating System: Microsoft Windows 10 (64-bit)

In the past, I was able to have 2 screens visible and work on either of them. I cannot do this now. Has something changed? How can I set this up?

I don't know what you mean by "anchor" the screens -- but if you right-click on the desktop and choose Display Settings, it will show the screens that Windows recognizes.
