I want to change my email address in HP Support Assistant. In order to do so I have to enter my password, which I can't remember. How do I reset my password?

Are you referring to the HP Passport Profile?
HP Passport is a web-based application that allows you to create web profiles that simplify navigation through HPs website. It stores your basic personal information, such as user ID, password, name, and address so you don't have to retype the information when you return in the future.
Please refer to this Link
Have you tried uninstalling and reinstalling the HP Support Assistant?
Please Note that your Laptop has to be connected to the internet if you wish to change the password even from the App
If the issue persists you can try a Reset. Please refer to this Link: https://support.hp.com/in-en/document/c04742289
