I am looking at using these to "modernize" a small office to use Windows 11 and M.2 SSDs. Can the G4 or G5 do?

The HP Prodesk 600 G4/G5 and Elitedesk 800 G4/G5 desktop PC's meet Microsoft's minimum W11 hardware requirements.
They both have support for M.2 NVMe SSD's.
On the G4's, make sure you buy one with an Intel 8th generation core processor, because some of them come configured with Intel 7th gens.
The G5's are fully supported.

Thanks for the information. It is being suggested that I go with purchasing barebones units (no dives, CPU or RAM) and add what is required. The price difference seems to make for good business or at least worth consideration.
I already know both of these use DDR4 and support the drives I want to use. Where can I find the detail of exactly which i5 processor I need for them?

Out of curiosity, has HP bothered to put together a database/list of machines or setup a quick easy way to determine which of their machines support Windows 11? Currently my main interest is in Probooks, Elitebook, Elitedesk & X360 units (G4 upwards).

HP has not published such a list that I know of.
You will need to cross reference the processors the PC's come with against the Microsoft W11 processor requirements site for AMD and Intel processors.

Generally you can assume the following:
Desktops:
No G3's support W11, nor does the Prodesk 400 G4.
All G4's support W11 IF they came configured with an Intel 8th gen core processor.
All G5's and above support W11.
Notebooks:
No G4's and below support W11.
G5's and above support W11.
