If there is a (new) BIOS update that would allow access to XMP, that would be wonderful news, but I doubt it.

Yes, the i5-7600K is compatible and a very nice upgrade too!
I just happened to upgrade an HP ProDesk 400 G4 SFF with an i5-7600K, and it is performing A-OK: Upgrading HP ProDesk 400 G4 SFF - HP Support Community - 8488474 and: HP ProDesk 400 G4 SFF Performance Results - UserBenchmark.

Yes, it will do, but be prepared that the i5-7600K will run a little hotter (91 watt TDP) than the i5-7400 (65 watt TDP).
Of course, it wouldn't hurt at all to improve the airflow through your CPU heatsink. I've mentioned/shown a couple of options, such as what I did recently with my HP ProDesk 400 G4 SFF upgrade project: Upgrading HP ProDesk 400 G4 SFF - HP Support Community - 8488474.
Some of the DIY off-the-HP-Reservation upgrades should only be performed when you have the proper equipment and you can do so safely without hurting yourself or damaging your desktop.

Well, to be honest, my personal 7th gen Intel processor preferences aren't necessarily applicable to your situation.
You should go for the i7-7700 if you haven't bought something else already. An i7-7700 is less expensive too via eBay.
