HP Newest 27" Widescreen IPS LED Full HD
macOS 10.13 High Sierra

We have the monitor hooked up to a MacMini. When the computer goes to sleep and it wakes up, the color display is tinted cyan and pink (similar to if the cable is not hooked up completely). If we unplug the HDMI and replug it in, it fixes the issue. Any ideas? We have replaced the HDMI cable and the issue is the same and we had no issues with previous Samsung monitor in use until last week (unlikely the Mini jack). Thanks.

You can try Resetting the SMC on the Macintosh.  The instructions from Apple are here.

Sometimes that will help with odd monitor and power issues.
