So, it appears that in the process of installing Windows 10 on a new SSD in these PCs, a BIOS setting which hides the WLAN M2 card from the OS is set to hide..
Simply changing this solved the problem!
Kudos to https://www.youtube.com/watch?v=LyVV78qhGdg who mentioned ensuring WiFi was set on in BIOS, which gave me the crucial clue.
The solution was actually in the manual on p.89 (https://www.itouchbiometrics.com/Manuals/HP_G3.pdf) , but the language was very confusing: "Run Computer Setup and enable network controller" actually means "enter BIOS and ensure OS is set to see M2 Network Card."

@Prométhée wrote:if you remove the ssd it works again ?
if we look at the list of possible components we see different m2/sata SSD models
No reason it shouldn't work..
unless there is a problem with the model used, or mishandling/conflict..
if the card is not visible anywhere, no drivers can be installed
Which model is the SSD, maybe this will give an indication to someone with the same problem, or who has seen this before
see if the documents say anything
yes, in this same manual that I had already indicated before, finally!

Updating the BIOS is recommended as standard maintenance of the computer. It can also help resolve the following issues:
- An available BIOS update resolves a specific issue or improves computer performance.
- The current BIOS does not support a hardware component or a Windows upgrade.
- HP Support recommends installing a specific BIOS update.
