Sorry but you cannot update a Legacy BIOS to UEFO BIOS.
You cannot use a UEFI graphics card in your PC
Sapphire makes new AMD graphics cards with a BIOS switch to use on Legacy BIOS motherboards. AMD cards require more power and are longer than Nvidia cards. You have to make sure the AMD card and new power supply need to run AMD card will fit in your tower okay.
MSI has some new Nvidia cards that will work on legacy BIOS. Other chiose is get an older AND or Nvidia graphics card that works on old BIOS.

Apparently the Saphire Nitro+ Radeon RX 480 has a BIOS switch on it. Will this work with my legacy BIOS motherboard? If not, do you have any graphics card recomendations that would provide similar graphics quality? Thanks for your help.

The RX 480 has a DUAL BIOS but the specs don't say Legacy and UEFI BIOS. You should check with Sapphire before buying that graphics card. Dual BIOS may not mean the card can run on Legacy and UEFI BIOS motherboards.
You can use Nvidia graphics cards in 600 series. Many folks say the Nvidia 660 is a good graphics card. The 660 is legacy BIOS support graphics card.
The Sapphire site has some Legacy/UEFI switchable graphics cards in R7 200 series cards. There may be others but you have to look at the specs.
Make sure you check with manufacturer before you buy or will have to send UEFI card back for refund.
