also, íf i buy the kit that i posted above, will i still be able to OC it to 3000mhz as advertised?

if not,

would you rather recommend 16gb single channel 2933mhz or 32gb dual channel 2133mhz for gaming?

I'm quite unsure if the RAM is going to make a big difference in performance, thus, I'd like to know, which of these prebuilts you'd rather get, for AAA games in highest settings on 1080p

I would go with the HP model.  It has an i7 processor versus an Ryzen 5 processor; 3060 TI video card versus a 2060.  You should research the two components that I mentioned to see the difference in them.  The memory won't make that much of a difference, 16 GB, 2933 MHz vs 16 GB,3200 MHz.

Alright, do you see a significant performance decreasement hence the HP build is run in single channel RAM and the other one in dual?

I have to be honest, I have never seen any actual statistics on the loss of performance due to not using matched pairs.  Therefore, I can't say for certain one way or the other.
