Yes, only one M.2 slot.
The drive capacities listed in the service manual are just what HP offered in the model series.
I don't know of any reason why a 1 TB NVMe SSD wouldn't work.

Your notebook only has support for one M.2 SSD.
Your notebook already has a 256 GB M.2 SATA SSD installed, so if you need more storage you will have to replace it with a larger capacity M.2 SSD.
Your notebook's M.2 slot also supports NVMe SSD's if you want to install one of those instead since they have much faster read/write speeds than SATA SSD's have.

If you want to clone the 128 GB drive's contents to the new one, you can install the new SSD in a M.2 NVMe enclosure, and clone the old drive's contents to the new one before you remove the drive.
I prefer clean to install Windows on new drives and reinstall my programs and files..
