I can't find the specification for the HP87B1 (ec1000) motherboard. The following information interests:
1. The maximum amount of RAM that I can install.
2. The maximum amount of NVMe
3. Ability to install SATA III 2.5 "

Is your machine a laptop/notebook ? No, HP does not supply motherboard info, only System board part numbers for notebook/laptops. What is your machine ? Please use the following way to find out the model/product of your machine
https://support.hp.com/lt-en/document/ish_2039298-1862169-16
For YOUR security reason, please do NOT post its Serial number (s/n) on Internet.
Regards.

It is an HP Pavilion Gaming Laptop 15-ec1086ur, its specs
https://support.hp.com/id-en/document/c07030607
There is no available parts list on HP Parts store
https://partsurfer.hp.com/Search.aspx?searchText=2H6B9EA
and only old manuals
https://support.hp.com/au-en/product/hp-pavilion-gaming-15-ec1000-laptop-pc-series/32612064/manuals
Therefore you have to wait to be able to get updates from HP
