Your model comes with one M.2 slot which supports NVMe SSDs gen 4.
Basically, M.2 NVMe SSDs have no capacity limit. You can upgrade to max 4 TB.
Your M.2 drive is installed in the thermal enclosure, so you need to buy a single-sided NVMe SSD with no heat sink. Please see this HP video.

HP doesn't provide service manual for 16-s1000 model series. Only manual for 16-s0000 is available, which states 32 (2x16) GB DDR5-5600 is supported.
