According to the service manual (on pages 33-34), your model comes with two M.2 slots for NVMe SSDs.
You can possibly keep the current boot drive and install a new M.2 NVMe SSD in the empty secondary slot for data storage.
Page 2 of the manual indicates your model supports NVMe gen 3x4 SSDs. You can install a gen4 NVMe, but it'll run at gen3 speeds.
Generally, M.2 NVMe SSDs have no capacity limit. You can install any size (1 TB, 2 TB or more).
This HP video may be of help for the M.2 drive upgrade.
