I bought a printer in the UK and originally enrolled in Instant Ink there. I have since moved back to Canada and bought a new printer but have been unable to enroll this printer for Instant Ink because I can't change the country for my shipping address. I was able to change the country for the address on my account, but not the one associated with shipping. Please help!

Welcome to the HP Support Community.
Thank you for posting your query, I will be glad to assist you.
I see that you are looking for help with moving your instant ink account to another country.
Instant Ink accounts are linked to the country/region of your HP account.
- To change the country/region for a printer in Instant Ink, add the printer to a different HP account that is in the desired country/region.
- Cancel the original Instant Ink account to prevent continued billing. Enrolling the printer in a new account does not automatically delete the old account.
- HP Instant Ink Platinum: The service is only available within the continental United States. If you move out of the service area, your subscription is cancelled and you may be charged an early cancellation fee.
Refer to this video link to Cancel the Instant ink subscription.
Refer to this link to re-enroll in instant ink for the new country once again.

Thanks, Irwin! I have already canceled my instant ink subscription for my UK printer and removed that printer from my account. I can't create another account though as my email is already in use. Is there a way to delete my account entirely so I can re-register in Canada? I think I created my account in Canada but started a subscription for the first time in the UK so it's all a bit messy.

Refer to this link to re-enroll in instant ink for the new country once again with a new email address as the old one is associated with the previous country.

I even changed the email associated with my UK instant ink account to an inactive email address and when I try to go re-enroll for a Canadian account and subscription, it automatically takes me to the GB website. Even after I have logged out of my GB account on all sites.
