I'm trying to set up my DeskJet 2600 all-in-one and on the screen E8 is showing up... what do I do? its brand new out the box and everything.

Welcome to the HP Support Community. 


That is the regular control panel on the printer 


Here is the control buttons indicate-




You will find this on the printer user guide as well -User Manual

You may refer to this document to setup your printer  First Time Printer Setup


Let's try a power reset on the printer


Reset the product

  • With the printer turned on, disconnect the power cord from the rear of the printer.
  • Unplug the power cord from the wall outlet.
  • Wait at least 60 seconds.
  • Plug the power cord back into the wall outlet.
  • Reconnect the power cord to the printer.
  • Turn the printer on. HP recommends plugging the printer directly into a wall outlet.

Try and make a copy.
