I am trying to print in color, but the colors are incorrect. Green comes out yellow, blue comes out dark red, gray comes out pink... We use Instant Ink cartridges, everything seems installed correctly. I have cleaned the heads twice and restarted the printer. Any insight?

Note that green = cyan + yellow, blue = cyan + magenta, gray = cyan + magenta + yellow. In your case cyan is not printing, resulting in the colors you are seeing.
The troubleshooting steps in the document here may help resolve cyan not printing on your HP Officejet Pro 6978 printer. Go through the steps in order. Pay special attention to the vents as shown in step 9.
If the steps there fail and you need to replace the Instant Ink cyan cartridge the document here has information on contacting HP to get replacement Instant Ink cartridges. Go to the HP Instant Ink site, the phone number (or chat option for some countries) will be listed in the lower center of the opening screen.
Alternately, you can click on the Virtual Assistant. When the assistant opens type "Where is my ink?" (w/o the quotes). The system will ask a few questions and then schedule your shipment.

1) Does the copy print out the same way?
2) What's the application you are trying to print from? Have you tried printing from a different application or devices?

Also, try updating the printer's firmware - HP Printers - Updating or Upgrading Printer Firmware
