I am trying to alter my payment details online for my Instant Ink account, but when I log in to https://instantink.hpconnected.com/uk/en all I get is the SIGN UP message or, when I click on the menu bar, I can go to Settings.
Under settings I can change my username/password, my personal details or see what computer I have used to log in with.
I pay monthly, am up to date, have used the link in my latest email from HP and to no avail; no method to change banking details or to see my print history.

I understand you have issues changing the bank details on the instant ink account page.
Don't worry I'll try to help you out.
Did you make any changes to your printer?
Have you turned on the web services?
Is the printer associated with the instant ink account?
Have you tried checking with a different browser?
Is your printer online and connected to the internet?
Have you enrolled your printer to instant ink subscription?
Restart the computer, router and printer together and try printing again.
Disable and re-enable web services on your printer and check if it helps.
If the printer is online and if it's enrolled, then I would suggest here is to update the printer.
In order to update the printer, On the printer control panel - Setup - Printer Maintenance - Update the printer.
Once done, restart the printer and then check.
Go to hpinstantink.com/signin (the HP Connected website) to sign in to your HP Instant Ink account, if you are not signed in already.
On your HP Instant Ink account page, review the following HP Instant Ink account information.
Print History: View the date and number of pages printed, and download invoices from completed billing cycles.
Account History: View detailed information about HP Instant Ink shipments, including the shipment date, shipment tracking numbers, and any additional charges. Also find enrollment and cancellation dates, promotional and referral discounts, and all historical transactions for your account.
