How do I print double sided on a5 paper?

Not all models support automatic 2 sided printing on all paper sizes. If you are not offered the automatic duplex you will have to manually duplex by refeeding the paper.

I'm given the option to double side, and it's turned on, but it's still printing single sided

According to the specs https://www.hp.com/ie-en/products/printers/product-details/product-specifications/2102043083 this size is supported for duplex. Are you selecting A5 as the paper size or are you using custom paper settings. Custom settings or setting the paper size as any will stop duplex from working. Also ensure that you are using the correct HP driver as non-HP drivers may cause unexpected issues.

All settings are as they should be and drivers are correct too.

I spent time with Claude, going through everything step by step. It seems to think that even though the spec says it should, it probably can't do a5 double sided

 

"despite what HP's spec sheet says, many HP inkjets — including this series — only auto-duplex reliably on A4 or Letter. The internal flipping mechanism is mechanically calibrated for those sizes. With A5, the printer often silently falls back to single-sided even when "Double-sided: On" is set"

 

I'm hoping this is not the case and I'm missing something, but I'm lost at this point

That is correct that some models do not, however I do not own or have access to one to try. The one possibility that I raised that I cannot see in your posts is how you have the paper size and type set on the printer itself. The screen shot shows the driver is set for auto type. You need to ensure that the type settings on the control panel of the printer are set for plain paper.
