HP Color LaserJet Pro MFP M479fdw

Same issue:

Printing from windows works fine - black print results in black ink.

Printing from MacOS Sequoia / Sonoma results in not using black ink - the print turns blueish.

The same PDF is used in both cases. In Windows I set "Color mode: Black and White" in MacOS I set the toggle "Farbe"="Color" to off. This is the PDF that was used:
https://www.cartridgepeople.com/info/download_file/force/2260/800

When I turn off the color toggle in the Print Dialogue of Apple Preview it still prints the b&w as color. So it gets a blue Tint and does not use the Black Ink.

I can not download apple drivers for the printer. It uses AirPrint3 so pleas don't tell me to update drivers.
These are settings available to me:

I just bought ink for 700€ it can't be that hard to make it use the right one so black is black not blueish.
