I have a HP LaserJet Pro M201dw and I need the language changed from Italian to English

Try performing the basic Factory reset from the control panel:

You may have to translate a little italian to get the job done, but there shouldnt be too many words to translate.

 

If that doesnt work you would have to consider looking up the steps to Cold/NVRAM reset the printer.  Resetting at this level usually wipes out the default language but its not always necessary.
