Am I being a bit dim..?
When I try to print from Word, for example, I get an error, as shown in the attached screenshot:
As far as I understand it, 'Tray 1' is the sheet feeder at the front of the printer and isn't a tray, so what am I doing wrong if I want to default tray to be Tray 2 with Tray 3 (I've added this option) as the backup (or the other way around - I don't mind which), but not have to stop every time I'm trying to print something to click 'OK'!

Your application is asking for paper that is not currently loaded. Check the defaults, we have seen many cases where the default paper type in the driver is different from what is showing as loaded in the printer. If you have plain letter paper loaded in tray 2 you need to ensure that the driver thinks that there is plain letter paper.

I think I'm being particularly dim, because I'm not sure I understand what you've written - sorry.
I've found where I can select the pages from in Word (do I need to do this with all applications I print from, or can this be set as the default for all applications?) and see I can select - or deselect - any of the trays, but is it document or application specific. I don't recall having a similar issue with my previous (very close male relative) printer!
I think (logically) and without being prompted by the printer:
- If Tray 1 is empty, use Tray 2
- If Tray 2 is empty use Tray 3
- If Tray 3 is empty, call the paper police.
Or am I being too optimistic?
