I did a search but didn't find the answer that I needed. Sorry if I missed finding something that has already been answered.
I am using Linux or Windows 7 OS.
If I load legal documents into the ADF and legal paper in the paper tray, can I copy without changing anything or is there seetings that I need to change?
Does the ADF or paper tray need to be extended?

Yes, you can copy legal sized documents using the ADF.
Yes, extend the tray.
The Specifications provide the information:
Section: Paper Handling > Supported Paper Sizes
Document from the printer's How-to section explains how to extend the tray:
