When I want to print a color document in black and white (B/W), my printer still prints some colors and the black is grey, not a sharp black. Shouldn't I be able to print B/W if the cyan, magenta, and yellow cartridges empty? Can I replace the cyan, magenta, and yellow cartridges with black cartridges?

No,

As your printer have a seperate printhead any ink is required to keep the printing system a live and prevent printhead clogging, you cannot print with any empty cartridges, all 4 cartridges must have ink to print.

 

That cannot be bypassed, you must have any color ink available with ink to resume pritner and a color ink cannot be replaced with a black one...
