Why can I only print in black and white from my iPhone to my hp2600 printer?

There are several "2600" models.

Assuming your printer was ever compatible with mobile printing, that has not likely changed suddenly.

If the issue is one of how to check / select printing options, the following might be helpful.

You could also try Restart everything, including the network.

If you cannot stand restarting all your stuff, at least restart the printer and the iPhone.

What you do and where you select settings depends on the method (app) used to print -- and perhaps even the type of content and the source of that content (file, web, scan).

AirPrint is standard - one example provided as FYI - includes the Color option slide bar
