I would like to be able to boot from the SSD I installed in my laptop's second m.2 slot, but I can't seem to find any such option in the BIOS or boot menu to select what drive to boot from. How can I achieve this?

You have to install Windows first!

If you do not remove disk 1 you get a DUAL-Boot system that allows you to select your Windows during start-up. (Not BIOS!)

If you remove disk 1 and start the installation, you always have to go into BIOS first!

I do have Windows installed on the second drive. In fact, the way it's currently set up, I swapped the original SSD to the second slot and added my m.2 SSD from previous laptop in the primary slot. I can boot from the drive in primary slot just fine, but I can't select anywhere which drive to boot from.

Leave everything as it is, open Diskmanagement and make a screenshot. Post the result.

I don't have the laptop on me at the moment so I'll post the screenshot when I'm back home, but both the SSDs are visible in disk management as well as windows explorer's My PC section.

Here's the screenshot. I can see both the drives. The 476 GB one is the what shipped with my laptop, the larger one is from my previous laptop. At the moment, the SSD from my previous laptop is in the slot near memory modules (the same slot in which this laptop's original SSD was installed), and the other one is in the second slot.

 

However, I did notice that the SSD wasn't showing up in the disk management before. I had to restart 2 - 3 times and reset the BIOS as well for it to appear. I don't think it's a loose connection or anything because I seated it pretty well and obviously it's screwed as well. It still doesn't show in the boot order menu though, so I can't boot from it even if it's showing up in disk management.

Right now you are using the "old" disk 0 and the partition structure does not look good.

 

Do you want to use this as your "main" drive?

Your partition structure on disk 1 is correct.

I would change the disks first before you configure the boot-partition!

What I want is to setup windows on the larger SSD and Ubuntu on the smaller one, then choose at startup which drive to boot from using the boot menu. Trouble being that boot menu won't show both the drives right now.

You have to reconfigure your disk 0 first. Why is your C-Partition so big?  This is a correct layout:

But first you have to save your data and prepare a Backup!
