Recently purchased an SSD M2 for my HP OMEN Laptop 15-ce0xx, I wanted to put this disk as a boot disk but it doesn't show up in the BIOS!
I cloned all the data from my old disk to this new one and I can normally access the SSD in windows.
What can I do to put this new disk of mine as a boot disk.

According to chapter 1 of the service manual for your notebook, the M.2 slot supports NVMe SSDs.

If that is what you installed, I suggest you temporarily disconnect the 2.5" drive and see if the notebook will boot from the SSD.
There are a few model notebooks where the SSD doesn't show up in the BIOS and no boot options are available, but the PC will automatically boot from the SSD if that is the only drive with an operating system on it.

I will try what you said.
However if I do what you are telling me and then reconnect the 2.5" drive will I be able to continue using the sdd as a boot disk? Or to use the ssd as a boot disk I can't use the other disk?

The Windows boot manager controls what drive is the primary boot drive, so hopefully when you disconnect the 2.5" drive, the boot manager will automatically assign the SSD as the primary boot drive.
The thing you have to know is that notebooks that come with a dual drive configuration (M.2 SSD + HDD), have no operating system on the hard drive.
So, if the boot manager changes the primary boot device back to the hard drive, you will have to remove Windows from the hard drive and only use it for storage.
