I have a 15s FQ5030TU. It came with a 500GB M.2 SSD. I also have an old ProBook430 with a good 500GB HDD in it. Can I add the old 2.5" HDD to the SSD in the new machine?

I would not do it.

The problem is that adding a legacy disk adds current consumption, lowering laptop battery life, increasing the heat inside the laptop.

There is also the fact that there are unlikely to be parts needed(screws and the mount) already present inside the laptop to add the legacy disk.

You can put it in a USB  powered external enclosure to gain extra storage space. Then you can just connect it to a USB port whenever you need to use it.
