I am looking to upgrade my laptop Ram (it is a HP Pavillion 14 CE3501na) - from 8gb (DDR4 2166) to 16gb but I do not know how many slots I have and what other specification of the memory I need. Seems like there are size difference between manufacturers modules so any help on specifics would be most welcome.

Your machine has 8 GB DDR4-2666 SDRAM (1 x 8 GB) (one slot) now. You can upgrade
(a) To 16GB : add 8GB to slot 2,
(b) To 32GB : install 16GB each to both slots.
The following RAM sticks are compatible
8GB: https://www.crucial.com/usa/en/pavilion-14-ce3501na/CT16202144
16GB: https://www.crucial.com/usa/en/pavilion-14-ce3501na/CT16202163
