I want to upgrade my RAM from 8 to 16 GB, and there are two slots for RAMs only, so can I replace the original RAM? I want to change my laptop from 4x2 GB RAM (4GB built in, and 4GB new) to 8x2 GB RAM.

Yes, your notebook can support 2 x 8 GB of DDR4-2400 CL17 memory.

HP indicates the max memory is 2 x 4 GB but that is incorrect.

Absolutely.
Your notebook probably supports 2 x 16 GB of memory, and you can run this command to see if that is possible:
1. In the search box, search for cmd and click Run as administrator.
This will open the command prompt.
2. Once command prompt is opened, type wmic memphysical get maxcapacityEx and press the enter key.
There, it will show the maximum RAM capacity your PC's motherboard can support.
The capacity is shown as Kilobytes, so you have to convert it to Gigabytes by dividing the number provided in the report by 1,048,576.

Yes, that's what the report is indicating but I have not read any discussions where someone installed 64 GB of memory in a 255 G7.
For one thing it is total overkill to install 64 GB of memory in that type of notebook not being for gaming, and the other thing it would be an unnecessary expense.
