My 15-bs0xx laptop came with a 128GB drive, a SanDisk SD8SN8U-128G-1006. I'd like to replace it with a larger drive, preferably a 512GB SSD. I looked at the service manual and it fairly straight forward. so the question is how does one move the data from one M.2 SSD to another when does not have a M.2 compatible desktop.

As mentioned on your subject, cloning is the way to go. I normally do (applicable for M.2 SSD's and 2.5" SSD.
(a) Put new SSD to an USB adapter (*)
(b) Use software to clone (**)
(c) Remove old SSD and install new SDD
(*) For M.2, there are few of them, some only support SATA, some only support NVMe and some support both. The following one supports both
