Hi!
My 840 G2 elitebook came without he fingerprint reader option. I wonder, is it possible to retrofit it? Genuine HP fingerprint readers for Elitebook 840-s can be bought for a reasonable price. Is it possible to install it and just plug in to the motherboard? Will my non-fingerprint version motherboard support this hardware? Does it has the connector, etc...

Yes the fingerprint reader board is an add in and all versions of that model have the supporting connectors etc. other than the actual fingerprint reader board itself.
See p 96 of the Manual here:
Installation does require pretty extensive disassembly.

I did not research any other model. You asked about G2 and I linked you to that manual. The only safe way to proceed is to find that exact part number.
Fingerprint reader board (includes bracket and cable) 730956-001
I see this same part is used in other models but you should buy based on the actual HP Part number:
