What are the Upgrade options for the Graphics Card in my ELitebook 840 G5?

Not sure which version you have. The video is soldered to the motherboard and not upgradeable without motherboard replacement. There is a version with Intel HD 620 only and then one with Intel and also AMD RX540 2 gig switchable video. 

These are the only built-in video card options. You do, however, have a Thunderbolt port which could drive an external GPU such as the Omen Accelerator:
