I need to install a new SSD on my laptop. It already had a 500GB M.2 (NVMe) SSD in it. I need to install a new 2.5 inch SSD. Where can I find the HDD flex cable required to convert the SATA connector on SSD to the small 12 pin connector on the motherboard?

The part number for the cable is L51095-001
You can try performing an online search with the part number to find the part.
Example
On page 37 of service manual you can see the steps to install the drive
