I have an HP 250 G7 with a i5-1035G1 CPU, 8GBof RAM and a 1TB 5400rmp HDD.
I want to add an ssd to it. 
Does the M.2 SSD slot support nvme SSDs? or only M.2 SATA drives are usable?
Do I have to buy a SSD bracket aswell?  Or do I just buy an SSD and put it in? I see there is a hole where I could put the M.2 SSD screw in.

Your user's guide (page 2) indicates M.2 NVMe SSD is supported.

Maintenance and Service Guide HP 250 G7 Notebook PC

 

You mentioned that you saw a screw hole for M.2 SSD. So, you already removed the back cover and saw an empty M.2 slot, right? If you saw the M.2 slot just to the right of the battery, as shown in this YouTube video, you can just insert an M.2 drive into the port and secure it with a screw.

Specs of an M.2 SSD you need is PCIe NVMe M.2 SSD 3.0x4 2280. You can choose any size you wish ( 500 GB, 1TB and so on).
