I've looked through the manual, repair guide and the internet and I can't find if I can replace my 2x4GB DDR4 3200MHz RAM with 2x8GB DDR5 5600MHz one. How can I check before buying if my motherboard supports those higher speeds?

What is your HP Envy x360 15-ey0xxx machine ?  For example

             ENV X360 15-EY0004AU

No, it won't run higher 3200MHz, 5600MHz may NOT run or run at lower speed.

Regards.

DDR5 memory will not work in your notebook for 3 reasons:

1.  It runs at a lower voltage than DDR4 memory.

2.  It has a different number of contact pins than DDR4 memory.

3.  The slot in the DDR5 memory board is cut in a different place than it is in a DDR4 memory chip making it impossible to fit in the DDR4 memory slot.
