Product: HP Pavilion Gaming 15-ec1001na
Operating System: Microsoft Windows 10 (64-bit)

I am currently planning on buying the 'hp pavilion gaming 15-ec1001na' however it only has 8gb of ram which is much for gaming so I was planning on upgrading it to 16gb I was also thinking of adding a 2.5" ssd to increase the storage. Does anyone know whether this would void the warranty on the laptop?

Warranty is a grey/gray area very hard to say in concrete. For new generation machines adding something is a work for Authorized Service Provider parts . You can add yourself. If something went wrong due to this upgrade, I think HP would not honor warranty.
