I mean, the chipset (HM175) and the DDR4 system should support 32Gb of RAM. In this case with 2 stick of 16Gb each (instead of the two of 8 each which the notebook comes with)
So, again, why in the specs HP say that the maximum is 16Gb? It has the same hardware of many competitor products that actually support 32Gb

Yes it should work. I do not know if you will find anyone who can guarantee it. Here is a user who pu a 16GB stick in one slot and it works. Sames series as yours:
It is a accepted practice to upgrade RAM or hard drive and will not void warranty as long as you break nothing during upgrade.
On page 40 of service manual you can see the steps to upgrade RAM

Hi,
The PC has been tested with 16GB of RAM and this is officially the max amount of RAM, However HP systems with DDR4 memory and 7th or 8th gen processors will run with 32 GB of DDR4 2400Mhz RAM.

HP representatives answered me very quickly.
They said that it will work, but for better work you need to choose with the same frequency and teminga. But they did not say anything about maximum volume ...
So, I have a question: if I insert a 16 GB slot with the same timing and frequency in the second slot before 8 GB are already installed, will it wake me up to 24 GB? And I will not spend money in the empty?)
