I recently bought a Leven nvme drive to put in my ProBook 640 G4.

I cloned the OS from the SSD to the m.2 and ran speed tests after, but am finding the speeds a bit slower than I anticipated they'd be from the Amazon reports. I've never had an m.2 before and don't know if this is a processor limitation, but am seeing speeds around 1100/1100 whereas there are reports of well over 1600 and close to 3000.

The bandwith limitation is normally because of the processor/chipset.
I can't say that I have ever heard of the SSD brand you state that you used.
The manufacturer's "Max read speed up to 2000MB/s" means that what you are seeing is within specifications.

It is more of a combination of chipset and processors.
Newer generation processors combined with their accompanying chipsets do provide higher bidirectional bandwidth.
