Can I replace "SanDisk SD7SN6S-256G-1006" with "Kingston NV2 PCIe NVMe M2"

Your SanDisk is an M.2 SATA SSD but your user guide (chapter 1 page 2) indicates your model supports M.2 PCIe NVMe SSD gen 3x4 2280. So the Kingston M.2 NVMe should work. The manual lists 256 GB NVMe SSD but that is just the size HP offered to some model series, and you should be able to use a larger size, such as 500 GB or 1 TB.

Kingston NV2 NVMe SSD is a gen 4 NVMe, and your model's M.2 slot is gen3 so, it'll run at a gen 3 speed, which still is a lot faster than M.2 SATA.
