One of the updates offered for my ProBook is the " System Default Settings for Windows 10" update that will "help the user reset such-and-so settings to their original settings". I want my carefully crafted settings to be left alone.
I do not want to include that update, and I would rather "hide" it.
Is that possible? If so, how?

Welcome to the HP User Community.
You might not need to keep the Auto-Updates setting active.
Most recent Update list available - OS and version - found for this machine:

The only 2022 update is for the BIOS - you might choose to manage this one update manually, that is, check / download / install any BIOS updates as opposed to trusting HPSA to know when you want to update the BIOS. The "manual" update method is actually preferred by many people for fussy BIOS updates.
If the update list continues to be empty of new updates, you don't need HPSA checking for new updates - certainly not every week...
Check / Adjust HPSA Settings Options
Open your HP Support Assistant application
Settings wheel / gear
Click Software Updates Settings to be ON or OFF
Click Done

Want to choose which types of Updates are checked?
Open your HP Support Assistant application
Settings wheel / gear
Click Software Updates Settings to be ON
Select which types of updates are allowed
NOTE >> Critical updates are installed regardless of types selected. If you don't want this, set all updates to OFF and handle your updates manually.
Click Done
Click Home key to return to main HPSA menu
