And if i cannot stop them completely how do Ii chose what I DO NOT want updated?

Welcome to HP Forums! I have read your post and wanted to help.
I understand that you want to turn off the Windows Updates on Windows 10. Please try the following:
Turn off Windows Updates in Windows 10
You can do this using the Windows Update service. Via Control Panel > Administrative Tools, you can access Services. In the Services window, scroll down to Windows Update and turn off the process. To turn it off, right-click on the process, click on Properties and select Disabled. That will take care of Windows Updates not being installed on your machine.

Hi:
For Windows 10 updates from Microsoft, you can use the hide updates tool.
Instructions for use and the link to download the tool are below.
https://support.microsoft.com/en-us/kb/3073930
Hiding any updates are permanent unless you run the tool again and uncheck the update you have selected to be hidden.
