I would like to upgrade my 8GB of RAM. The computer came installed with one Samsung 8GB DDR4, 2666mhz RAM. Unfortunately these are very hard to find new now so I am not sure I can find a second one. I can only see used ones on eBay that are quite expensive.
Is it OK to buy another RAM with the same specs from a different manufacturer? Crutial seems to do one with the same features but I am not sure if it would be stable with the Samsung.
If I have to buy 2 new modules that are from the same manufacturer, is there any point upgrading to 3200mhz, or can the machine only handle the 2666mhz RAM?

You can mix manufacturers but if you are going to have 2 modules its best to have them the same speed and latency (CL=x) so there is no issue with dual channel operation. Also they should be the same density if possible; i.e. the same number of little black blocks on the side of the module. Other arrangements will likely work but pairing as suggested above is optimal.

It has 8 GB DDR4-2666 SDRAM (1 x 8 GB). You can install 3200MHz RAM but machine runs at 2666MHz as designed.
