Hi:

The Crucial memory report for the model series indicates it will support up to 2 x 32 GB of DDR5-5600 MHz memory.

HP HP Victus 16-s1000 | Memory RAM & SSD Upgrades | Crucial.com

HP only has the service manual for the original model series and chapter 1 indicates the older model series supports 2 x 16 GB of memory.

Maintenance and Service Guide Victus by HP 16.1 inch Gaming Laptop PCModel numbers: 16-s0xxx

You can also run this command to see what Windows indicates is the max memory:

1. In the search box, search for cmd and click Run as administrator.

This will open the command prompt.

2. Once command prompt is opened, type wmic memphysical get maxcapacityEx and press the enter key.

There, it will show the maximum RAM capacity your PC's motherboard can support.

The capacity is shown as Kilobytes, so you have to convert it to Gigabytes by dividing the number provided in the report by 1,048,576.

Generally, the sky's the limit regarding SSD capacity as long as the drive is single-sided, so it fits in the M.2 slot.

The service manual shows two drive positions but that is incorrect.  Your notebook only has support for one M.2 SSD as shown in the service teardown video:
