Do I have any options on replacing the OEM Mediatek MT7921 Wifi card with another manufacturer? Intel?
Or worst case should I get a docking station and go hardwired to get away from this lousy wifi adapter? Any recommendations?

It seems that some of the notebooks in the previous 15-eg1xxx model series came with Intel cards, so it is not out of the realm of possibility that you can replace the card.
You can't use the Intel AX201 CNVI card because that would only work in a notebook that originally came with that model.
I recommend you experiment with this card/part number:
Intel AX210 Wi-Fi 6E 2x2 AX + Bluetooth 5.2 M.2 2230 non-vPro HP part # / SPS # M27269-005.

Have you installed the latest driver for the MT7921 to see if that made any improvement?
These Wi-Fi and Bluetooth drivers are newer than what HP has on your notebook's driver page:
