The specifications for the HP Envy x360 15-ew0000 series (https://support.hp.com/in-en/document/ish_6489658-6489643-16?linkId=100000233484645) mentions that these laptops can support up to 16 GB of ram (1x 8GB + 1x8GB), however, the processor core i5 1240P can support up to 64GB according to intel's website.
I want to upgrade it to at least 20GB (1x 4GB + 1x 16GB) or 32GB (1 x 16GB + 1 x 16GB), is this possible?

Generally, that report is reliable.
Even the Crucial memory report for your PC indicates that 64 GB of memory is supported, and they have been in the memory selling business for eons.

I don't know of any reason why a 20 GB configuration wouldn't work, but taking these new notebooks apart is not the easiest thing to do nowadays.
Gone are the days when there were accessible memory doors, and you could install memory in less than 5 minutes.
With a 20 GB memory configuration, the memory runs in the lower performing single channel mode as it is right now with a single 4 GB memory chip.
In order for the memory to run in the better performing dual channel mode, the memory needs to be installed in matched pairs (2 x 8 GB, 2 x 16 GB).
So, my recommendation to you is to install the memory once. 2 x 16 GB and done.

Hi:
Run this command to see if your notebook will support more than 2 x 8 GB of memory:
1. In the search box, search for cmd and click Run as administrator.
This will open the command prompt.
2. After the command prompt is opened, type wmic memphysical get maxcapacityEx and press the enter key.
There, it will show the maximum RAM capacity your PC's motherboard can support.
The capacity is shown as Kilobytes, so you have to convert it to Gigabytes by dividing the number provided in the report by 1,048,576.
If the report indicates 33,xxx,xxx, then you should be able to install 2 x 16 GB of memory.
