I recently purchased a 15z-eh000 with AMD Ryzen 7 4700u off of ebay, and I'm thinking of upgrading the RAM from 8GB (2x4GB DDR4-3200) to 16GB. But after downloading the crucial system scan to see what's compatible, I was shown that it only allows up to 8GB. I'm a little confused since I've seen others mention that this laptop can handle up to 32GB (2 x16GB).

The Maintenance and Service Guide you linked is for 15-dy0xxx and 15t-dy000 while the one I purchased is a 15z-eh000. The guide shows different hardware using Intel while mine is AMD. They also have external differences including the button layouts, bottom panel screw placements, and side component locations.
So I am still confused about the max ram support.
