I'm a little confused as to the maximum RAM available for my model. The third-party seller's website gives it as 8GB. The HP manual seems to suggest it's 16.
With product number 1WY59EA#UUW I believe I have the 7th Gen UMA. In the manual (page 2, product description) that should mean it supports up to 16gb. Weirdly, the possible configurations listed do not include 16 and only go up to 8.
I feel I've probably been dumb somewhere along the line and am missing something obvious and important. Thanks in advance for any help you can give.

The series has many options for CPU/Processor and
1. Machines which have Core processor support 16GB of RAM max.
2. Machines which has Pentium/Celeron processor only support 8GB of RAM max
Your machine has an Intel core processor therefore it supports 16GB of RAM
