Do I just buy an extra 8GB stick or do I need to buy a new 16GB (2 x 8GB) pair?

If you have a single stick of memory and want o double it you are always better off getting an exact matching stick of memory.  The older you system is, the less likely the correct pair of memory will work.

It appears your memory maxes out at 16gb. (2x8)

You are running linux use the command sudo dmidecode --type memory

Manufacturer: Hyundai
Part Number: HMT151R7BFR4C-H9
Rank: Unknown

Then use a browser to lookup the part number.  I use eBay as it is cheaper than HP but can't always return if it does not work: example:
