Hi.
I have HP Pavilion Gaming 15-ec0901na (8UM60EA), I would like to know, what is the max capacity of RAM supported by this laptop and how to install a new HDD on this laptop?

Max memory on the Ryzen system will be 32 gigs of DDR4-2666 which will downclock to -2400 speed.
Pages 27-34 show removal of the back cover. Right now you have a 512 gig M.2 SSD. You can also have a 2.5 inch SSD or HDD but would need mounting hardware and a cable. Please be specific whether you want to install a higher-capacity M.2 or add a second drive for storage.
Opening the laptop is authorized to end users so no worries about warranty.

Yes 2 x 16 DDR4-2400 would work. You need these:
(5) Hard drive connector cable L72698-001
(6) Hard drive bracket not available as spare part
You can see HP does not sell a bracket. And the cable is very hard to find and can be expensive. This eBay seller has the caddy and cable for sale:
